These Teriyaki Seitan Skewers are a throwback to my childhood when my mom made a similar recipe using flank steak. I loved the smell of this marinade as it broiled over the skewers, which my mom lovingly twisted every couple of minutes under the broiler. We ate them over steamed white rice and alongside broccoli.
I’ve reinvented the recipe with seitan to create these Teriyaki Seitan Skewers that I think are better than what I grew up with (sorry, Mama!). I love it when I can veganize a recipe from my childhood with delicious results! A big bonus for me with this recipe is that my oldest daughter, Gaby, loved them and she’s not a seitan fan at all. Now, I just need to figure out a way to get her (and the rest of my kids) to eat tempeh!

Seitan is a plant-based protein made from vital wheat gluten, (which is just a flour-like substance primarily consisting of gluten extracted from wheat flour.) It has a chewy texture when cooked, making it an easy vegan alternative to meat.
You can purchase seitan at the grocery store, seasoned and unseasoned. It can be crumbled or sliced. Like tofu, seitan takes on the flavor that it is infused with, making it a perfect canvas for these skewers.

How to Make Teriyaki Seitan Skewers
These skewers are simple to make in just 3 easy steps. Just plan ahead to allow the seitan to marinated with plenty of time.
1. Marinate: Prepare the marinade in a sealable bag or container. Add the seitan pieces and allow to flavor for at least 2 hours (or overnight).
2. Thread: Divide the seitan among the skewers.
3. Broil: Place the skewers on a sheet pan and broil for 3 minutes on each side.

Ingredients
- 3/4 cup olive oil
- 1/2 cup tamari, shoyu or soy sauce
- 1/3 cup red wine vinegar
- 2 1/2 Tbsp vegan Worcestershire sauce
- 1 cup chopped red onion
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger
- 2 Tbsp maple syrup
- 24 ounces seitan
- 20 6-in skewers
Instructions
- Make the marinade: In a sealable bag, combine all of the ingredients except the seitan.
- Marinate the seitan: Add the seitan and marinate for at least 2 hours.
- Thread the skewers: Slice or break the seitan into skewer-like pieces or chunks and thread onto the skewers.
- Cook the skewers: Broil for 2-3 minutes on each side. Alternatively, you can cook on a grill or in a grill pan. Meanwhile, bring the marinade to a boil. Remove from the heat and serve alongside the skewers.
Notes
- Gluten Allergy? Swap the seitan with tofu or your favorite gluten-free plant-pasted protein.
- Soy Allergy? Replace the shoyu with coconut aminos or Bragg’s Liquid Aminos. Use a non soy tempeh or Pumfu.
