Easy Vegan Gazpacho

Ingredients

  • 2 plum tomatoes quartered
  • 1 English cucumber or 2-3 Persian cucumbers sliced in chunks
  • 1 red bell pepper cut into chunks
  • 1/4 red onion
  • 3 garlic cloves
  • 3 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 1 tsp vegan Worcestershire sauce

Instructions

  1. Combine all ingredients in a high speed blender until smooth.
  2. Chill for 2 hours or more.
  3. Serve cold topped with freshly chopped avocado and/or cucumber.
