White Bean & Quinoa Caramelized Onion Burgers

Description

These easy-to-make, plant-based White Bean & Quinoa Caramelized Onion Burgers are packed with protein and layered with savory goodness. Perfect for weeknight dinners or casual gatherings, and hearty enough to handle your favorite Fall chili and sauces.


Ingredients

  • 1/4 cup olive oil
  • 4 yellow onions, sliced into half moons
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 15 oz can Great Northern white beans, drained and rinsed
  • 1 Tbsp lemon juice
  • 1 1/2 tsp steak seasoning
  • 1 1/2 cups cooked quinoa
  • 3 Tbsp all-purpose, oat or gluten-free flour
  • 6 vegan burger buns
  • 1/2 cup vegan mayo
  • 1/2 cup pickle slices
  • 1/2 cup sun-dried tomatoes
  • 1 cup arugula

Instructions

  1. Prep the oven: Preheat the oven to 350°F.
  2. Caramelize the onions: In a large skillet, heat the olive oil. Add the onions. Season with salt and pepper. Caramelize the onions over medium heat for about 25 minutes. Set half of the onions aside. Add the white beans, lemon juice and steak seasoning. Mix the ingredients well until cooked through.
  3. Make the burger patties: In a food processor, add the quinoa, and bean mixture. Pulse until the beans are broken down but there is still texture.
  4. Bind the burger patties: Add the mixture to a large mixing bowl and sprinkle with the flour. Mash it with a fork until the flour is incorporated. Cover and let it sit for 10 minutes.
  5. Bake the burgers: Shape the mixture into 6 patties and place on a sheet pan lined with parchment paper. Bake for 15 minutes. Flip and bake for another 10 minutes. 
  6. Garnish and serve: Toast the buns and spread with the garlic aioli. Top with a burger, pickle slices, sun-dried tomatoes, caramelized onions, and arugula. Place a bun on top and enjoy!

Notes

  • Spoiler Alert: White Bean & Quinoa Burger patties can be made in advance and stored in an airtight container in the refrigerator for 3-4 days or up to 5 months in the freezer.  
  • For non-vegans: Swap the veggie burger with a beef, chicken or turkey burger.
