Description

A family favorite that’s both easy to make and delicious, this Homemade-ish Vegan Kale Caesar Salad is perfect for sneaking greens into your kids’ meals. All you need is just 15 minutes and some favorite store-bought ingredients.


Ingredients

Scale
  • 1 head lacinato kale, stems removed and thinly sliced
  • 1 head romaine, thinly sliced
  • 1/2 cup dried, roasted chickpeas (store-bought or homemade)
  • 2 avocados, diced
  • 1/2 cup vegan Caesar dressing (store-bought or homemade)
  • 1 Tbsp Everything Bagel seasoning

Instructions

  1. Combine the greens: In a large bowl, combine the romaine and kale.
  2. Dress the greens: Toss with the dressing.
  3. Add the toppings: Add in the chickpeas and avocado.
  4. Finish: Sprinkle the seasoning on top and serve.

 

Notes

  • Spoiler Alert: Homemade-ish Vegan Caesar Salad is best eaten when served. 
  • For non-vegans: Top with cooked, shredded or chopped chicken.
